Why not try a slice of Waterloo, named after the Duke of Wellington’s estate where the cheese originated? Produced by the Wigmore family in Berkshire, this cheese is made from the unpasteurised milk of Golden Guernsey Cattle and offers a creamy rich, but delicate flavour, with a mild earthy aroma. Alternatively, the Montgomery Cheddar, made in Somerset by Jamie Montgomery, is delicious, wrapped in cloth to mature for 14 months; it provides a nutty, complex, full-bodied flavour. As for the Colston Bassett Stilton, what a treat! Produced in Nottinghamshire by Billy Kevan, this cheese remains one of the only hand ladled Stiltons available, a process which results in an intensely rich and creamy texture with a deep and lingering complexity.
